Fall Mojito Made With Haitain Rhum Barbancourt

Perfect for a September day!
 FALL MOJITO: 2 oz 3 Star Rhum Barbancourt 4 Year Aged Rhum 1 oz Autumn simple syrup …
3/4 oz fresh lime juice 10 basil leaves 1 basil sprig for garnish 1 lime wheel for garnish (optional) 1 oz Ginger Beer Pick 10 basil leaves.
Place in your hand and clap your hands together to wake up the basil.
Place into cocktail shaker. Add 1 oz of autumn simple syrup and then give the basil a few taps with a muddler.
Add the rum, lime juice, and ice to your shaker. Shake well.
Double strain into a collins glass filled with ice. Top with 1 oz of ginger beer. Garnish with a basil leaf and an optional lime wheel. 
AUTUMN SIMPLE SYRUP: 2 cups of water 2 cups of brown sugar 2 whole nutmegs 1/4 cup of cloves 2 cinnamon sticks 1/4 cup allspice berries tsp whole black peppercorns tsp vanilla extract Shot of Rhum Barbancourt 2 twists of orange peel Combine all ingredients except vanilla extract in a saucepan. Simmer for approximately 30 min­utes.
Strain threw a sieve and cheesecloth and funnel into a glass bottle. Allow to cool and add vanilla extract and a shot of Rhum Barbancourt.  Keep in the refrigerator for approximately 3 weeks.
